About the Recipe

Ingredients
Ingredients:
- 1 small pumpkin (about 2 pounds), peeled, seeded, and chopped into chunks
- 1 small butternut squash (about 2 pounds), peeled, seeded, and chopped into chunks
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup coconut milk (can use light or full-fat)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper, to taste
- Optional toppings: toasted pumpkin seeds, crumbled bacon, fresh herbs, etc.
Instructions:
1. In a large pot or Dutch oven, heat some oil or butter over medium heat. Add the chopped onion and minced garlic, sautéing until they become translucent and fragrant.
2. Add the chopped pumpkin and butternut squash to the pot, stirring to combine with the onion and garlic. Cook for about 5 minutes, allowing the vegetables to slightly soften.
3. Pour in the vegetable or chicken broth, ensuring that the vegetables are fully submerged. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the pumpkin and butternut squash are tender.
4. Using an immersion blender or a regular blender (in batches), puree the soup until smooth and creamy. Be careful when blending hot liquids and follow the instructions for your specific blender.
5. Return the blended soup to the pot (if using a regular blender), and stir in the coconut milk, ground cinnamon, ground nutmeg, salt, and pepper. Taste and adjust the seasonings to your preference.
6. Warm the soup over low heat, stirring occasionally, until it reaches your desired serving temperature.
7. Ladle the pumpkin butternut soup into bowls, and if desired, top with toasted pumpkin seeds, crumbled bacon, or fresh herbs for added flavor and texture.
8. Serve the soup hot and enjoy its comforting and delicious flavors!
Feel free to adjust the seasonings and consistency as per your taste. This recipe can easily be doubled or halved depending on the desired quantity. Enjoy your homemade pumpkin butternut soup!
