- 1 bunch of asparagus, trimmed

- 1/4 cup of coconut oil, melted

- 1/4 cup of pistachio nuts, finely chopped

- 2 tablespoons of mayo (preferably sugar-free)

- 1 tablespoon of fresh parsley, chopped

- 1 teaspoon of fresh thyme, chopped

- Salt and pepper, to taste


Instructions:


1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.


2. In a shallow bowl, mix together the crushed pork rinds, chopped pistachio nuts, parsley, thyme, salt, and pepper.


3. Dip each chicken cutlet into the melted coconut oil, then coat it with the pork rind and pistachio mixture, pressing it gently to adhere. Place the coated cutlets on the prepared baking sheet.


4. Bake the chicken cutlets in the preheated oven for about 20-25 minutes, or until they are cooked through and the crust is golden brown.


5. While the chicken is baking, steam or blanch the asparagus until crisp-tender. Drain and set aside.


6. In a small bowl, mix together the mayo, a pinch of salt, and a pinch of pepper.
